1 1/12 pound of ground beef
¼ cup of white onions
1 tsp of salt
1 tsp pepper
¼ tsp cumin
12-16 corn tortillas
Pack of shredded cheese
1 ½ cup of water
1 cup of all purpose flour
2 tablespoons of chili powder
To a pan add ground beef and cook adding in salt, pepper and white onion. Cook until the onion is soft.
In a separate medium pan add oil and once it is hot add in about 1 cup of flour and let brown adding in red chili powder, salt and pepper and ¼ tsp of cumin once all brown add in 1 ½ cup of Hot water whisk constantly so it does not burn, allowing to thicken. Lower heat on the pan start dipping your white or yellow corn tortillas covering both sides with the sauce.Then place in a pan add in your beef to your liking and roll. Continue this process until using all the beef. Use the extra sauce to pour on top of the enchiladas and add to the top 3 cups of shredded cheese. You can add extra cheese if you like them. Place in the oven at 350 for 15-20 minutes or until the cheese is melted.
