Turkey Sloppy Joe Stuffed Sweet Potatoes

The traditional sloppy joe meat mixture jam packed with more veggies and stuffed into a veggie is our January dream. There are lots of flavor profiles going on here and it all mixes together so well. We went the “non-traditional” route here with a sweet potato since we know people struggle to get in the recommended amounts of fruits and veggies per day.

 

INGREDIENTS

6 Medium Sweet Potatoes

1 Tbsp. Avocado Oil (or another neutral oil)

1 lb.Ground Turkey

1 lb. Mushrooms, finely chopped

2 Medium Bell Peppers, finely chopped

1 Medium Yellow Onion, diced

1, 8 oz Can Tomato Sauce

3 Tbsp. Worcestershire Sauce

1 Tbsp. Date Syrup (or Honey)

2 Tbsp. Apple Cider Vinegar

1 Tbsp. Hot Sauce

1 tsp. Dried Thyme

Optional garnish: diced pickles, green onions

 

DIRECTIONS

  1. Poke holes in potatoes with a fork and place in microwave for 5 minutes
  2. Test their readiness by pushing softly and if they aren’t continue heating in 3 minute intervals
  3. Put oil in a large pan and heat over medium-high heat
  4. Brown the ground turkey for 5-10 minutes
  5. Add in mushrooms, bell peppers, onion, salt and pepper and let the vegetables cook down by half
  6. In a bowl mix together tomato sauce, worcestershire sauce, date syrup, apple cider vinegar, hot sauce and thyme
  7. Once meat mixture is at your desired volume size add in sauce and combine
  8. To serve, cut a sweet potato in half  on the bottom and spoon meat mixture over the top
