INGREDIENTS
2 Tbsp. Olive Oil
1 ½ lb Chicken Breast
½ c. Gruyere, Shredded
3 Onions
2 Tbsp. Thyme
Salt and Pepper to taste
Directions
- Season the chicken breasts with salt and pepper as desired
- Slice onions into strips
- In a large cast iron skillet heat the olive oil and then add in the onions on medium heat until caramelized (about 30-40 minutes)
- Add in thyme, salt and pepper
- Preheat the oven to 350
- Add the chicken to the bottom of the cast iron and top with onions
- Bake for 20 minutes, or until internal temperature reaches 165 degrees
- Add cheese on top and place back in the oven until cheese is melted, about 5 minutes
