This orzo pasta salad is an easy side dish or light lunch for our friends across the pond.
INGREDIENTS
1 c. Orzo Pasta
1 8oz pkg. Mozzarella Pearls
1, 5oz pkg. Cherry Tomatoes
½ 5oz. pkg. Arugula
⅛ c. Olive Oil
Salt and Pepper As Desired
DIRECTIONS
- Cook pasta according to package directions
- Drain and place in a large bowl
- Cut the cherry tomatoes in half and place in a bowl
- Place the arugula, olive oil, and salt and pepper as desired and mix so while the pasta is still warm to slightly wilt the arugula
