# MINI SALMON BURGERS

## Get your recommended weekly seafood in with this flavorful recipe. Sliders are an excellent way to get more indulgent food into the correct portion to enjoy.

#### **What You Need**

- 1 lb. Fresh Salmon, boneless and skinless
- 2 tsp. Dijon Mustard + 1 Tbsp
- 1 Small Shallot
- ¼ c. Bread Crumbs
- 1 Egg
- ½ Medium Cucumber
- 1 Head Lettuce
- 3 Tbsp. Greek Yogurt
- 6 Slider Buns

#### ** How It’s Made:**

1. Heat a medium-sized skillet on medium-high heat
2. In a food processor combine 2 teaspoons of Dijon mustard, shallots, egg, and breadcrumbs
3. Add in salmon and lightly pulse about 6-8 times or to the desired consistency
4. Form into 6 patties and cook in pan until internal temperature reads 145 degrees Fahrenheit (about 4-6 minutes per side)
5. Thinly slice cucumber 
6. Tear lettuce leaves into individual pieces
7. Take 1 lettuce leaf and fold it over on itself until it fits on the buns
8. Place a patty on top
9. Mix together Greek yogurt and 1 tablespoon Dijon mustard and spread on top bun
10. Put 2 slices of cucumbers on top and top with bun

**             Serves 6**
