If you didn’t wear your green, be sure to eat it up this St. Patrick's Day. This recipe is so quick and simple! It’s easy to prep a few days out for dinner, or as meal prep and can be paired with chicken or shrimp for a more filling meal. Bonus points if you put in some quinoa to make it complete!
INGREDIENTS
1 Small Bunch Kale
¼ head Cabbage
⅛ c. Olive Oil
⅛ c. Apple Cider Vinegar
⅛ c. Dijon Mustard
¼ c. Maple Syrup
Salt and Pepper to taste
DIRECTIONS
- Finely chop kale and cabbage and toss together in a large bowl
- In a small bowl whisk together oil, apple cider vinegar, dijon mustard, maple syrup, and salt and pepper
- Add the dressing to the vegetables and massage together for 2 minutes
